Frozen / Salted Anchovies

What it is

The same northern anchovy sold frozen in boxes or salt-cured in bags — the budget pier/surf/rockfish bait. Salting firms the flesh so it survives casts and nibbles far better than fresh-frozen. The economical alternative when live bait is unavailable or, per the Oceanside Pier discussion, when an angler wants to stop paying live-bait prices.

How to hook / rig it

  • Whole on a hi-lo rig or Carolina rig: nose-hook or thread onto the hook; salted anchovies stay on through multiple casts.
  • Chunks: cut into 1" steaks for rockfish and perch; strips for halibut.
  • Salt your own: layer fresh anchovies in non-iodized salt/kosher salt overnight — firms them for surf casting.
